Organic Road Organic Unbleached Spelt Flour is lighter and nuttier than whole wheat flour with the bran removed. Spelt is an ancient cereal grain that has been cultivated for centuries; it is a close relative to wheat and does contain gluten. It's easier to digest than other wheat flours and will give you a lighter texture to baked goods. This is an unrefined flour with no bleaching or additives used and no sugar or salt added.
